Biography

Yuge Niu is assistant researcher in the Department of Food Science and Engineering at Shanghai Jiao Tong University, Shanghai, China.  She obtained her undergraduate degree in biological technology from China Pharmaceutical University; his graduate studies were in Biochemical Pharmacy (Ph.D.) from  China Pharmaceutical University, and joint PhD study in the Department of Nutrition and Food Science at University of Maryland, College Park, MD (supervisor, Liangli (Lucy) Yu).  She worked as a post-doctor in the Department of Food Science and Engineering at Shanghai Jiao Tong University during 2012 and 2014.  She has nearly 20 refereed journal publications in food science, human nutrition and biochemistry and broad spectrum journals.  Dr. Niu’s research program is known for its innovative approach to food carbohydrates and proteins with applications related to nutraceuticals and food delivery system.   She has and continues to be active in international research collaborations in US.
